Air Fried Chicken Parmesan

One of my go-to orders at Italian places is Chicken Parmesan, so I wanted to recreate it and came up with this AIR FRIED CHICKEN PARMESAN! Made it with whole wheat bread crumbs and air fried, so you can savor the taste of this Italian classic without the deep frying!

What you'll need:

  • 2 chicken breasts

  • An egg

  • Bread crumbs: I used Panko Whole Wheat Bread Crumbs - Panko seems to make everything more crispy than regular bread crumbs!

  • Shredded Parmesan cheese

  • Garlic powder

  • Italian seasoning

  • Sea salt

  • Pepper

  • Spaghetti: I used Banza Chickpea spaghetti noodles - they were great!

  • Shredded mozzarella cheese

  • Marinara sauce: my favorite is Trader Joe's Organic Tomato Basil Marinara

  • Finely chopped basil

Materials you'll need:

  • Cutting board

  • Sharp cutting knife

  • Two small bowls

  • Fork or whisk

  • Air fryer

How to do it:

First, preheat your air fryer to 400 degrees (some air fryers do not require preheating, so skip if yours does not).

Next, butterfly and half each chicken breast so they are about 1-inch thin.

In a small bowl, whisk the egg.

In another small bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, sea salt, and pepper.

One-by-one, dip each halved chicken breast into the egg, followed by the breadcrumb mixture - apply a little bit of pressure to the chicken in the breadcrumb mixture to make it stick, repeat until all four chicken pieces are coated with breading.

Place chicken in your air fryer and cook for 16 minutes, flipping halfway through. Your air fryer may not be big enough to fit all four pieces of chicken (mine was not), so do two rounds of cooking!

Meanwhile, boil spaghetti according to instructions and strain.

Once air fryer time is up, sprinkle mozzarella cheese on top of each piece of chicken (about 3 tb for each piece) and air fry for another minute at 400 degrees.

In a large mixing bowl, mix cooked spaghetti and 1 1/2 cups of marinara together until spaghetti is fully coated.

Plate chicken, dollop a few tablespoons of marinara on top of each piece, and sprinkle chopped basil over top.

Serve with prepared spaghetti and enjoy!!!
