Almond Lemon Poppyseed Muffins

Something about a lemon poppyseed muffin makes all your worries go away & these ALMOND LEMON POPPYSEED MUFFINS do just that! These muffins are tender, moist, and full of lemon flavor with a hint of almond.

Here is what you'll need:

  • 2 eggs

  • Plain Greek Yogurt

  • Coconut oil

  • Almond extract

  • A lemon

  • Almond flour

  • Coconut sugar

  • Poppyseeds

  • Baking powder

  • Baking soda

  • Salt

Materials you'll need:

  • Large mixing bowl

  • Medium mixing bowl

  • Whisk

  • Rubber spatula

  • Measuring cups (or food scale)

  • Measuring spoons

  • Muffin tin

  • Silicone or paper muffin liners

How to do it:

First, preheat your oven to 350 degrees and line a muffin tin with silicone or paper muffin liners.

In a large mixing bowl, whisk up eggs. Add in Greek yogurt, melted coconut oil, almond extract, and lemon juice and mix well.

In a medium-sized mixing bowl, mix almond flour, coconut sugar, poppyseeds, baking powder, baking soda, and salt until mixed well.

Add dry ingredients to wet ingredients.

Mix batter until it is fully combined.

Disperse batter into muffin tin - each cup should be about 2/3 full.

Bake for 30-35 minutes.
