Baked Chicken Alfredo Mac

Sunday comfort food comin' atcha!
Because sometimes you just need some chicken Alfredo and this Baked Chicken Alfredo Mac satisfies all of those cravings!
Made with brown rice pasta, organic Alfredo sauce, and chicken tenderloins, you can have Olive Garden's flavor at only 360 calories per serving!
So let's get cookin'!
What you need:
Chicken tenderloins: can substitute for a vegan option
A box or bag of your favorite pasta: I used Trader Joe's Brown Rice & Quinoa Mini Elbow and really liked it!
A jar of your favorite Alfredo sauce: I used Simple Truth Classic Alfredo Sauce and it was very yummy! Can substitute for a vegan Alfredo sauce
Shredded mozzarella cheese: can substitute for a vegan cheese
Shredded Parmesan cheese: can substitute for a vegan cheese
Sliced crimini or portobello mushrooms
Garlic powder
Italian seasoning
Pepper
First, preheat your oven to 375 degrees and prepare a 9x13 baking dish by greasing it.
Cook your chicken by either sautéing in, baking it, or air frying it. I air fried mine at 390 for about 6 minutes each side. Reminder: chicken will cook a little bit more in the oven. After chicken is cooked, cut into small chunks and set aside.
Next, boil and strain your pasta. What I really liked about this Trader Joe's pasta was that it takes 2-3 minutes to boil!

Place your pasta in a large mixing bowl with your cut up chicken, sliced mushrooms, Alfredo sauce, 1/2 cup of your mozzarella cheese, garlic powder, Italian seasoning, and pepper until it is fully mixed.

Spread mixture across your prepared 9x13 baking dish and sprinkle remaining mozzarella and Parmesan cheese across the top.
Pop it in the oven for 25 minutes!

Cheese should be golden brown and a little crispy on the top.

Serve with your favorite salad, dig in, and enjoy!!!
