Chewy Granola Bites

CHEWY GRANOLA BITES (aka heaven in bite-sized form). Packed with nutrients, crunch, and natural sweetness, these are my go-to snack nowadays! I keep them in the freezer and pop one out when I need a little something or when my sweet tooth calls.

What you'll need:

  • Oat flour: just oats blended up finely, I used Bob's Red Mill Extra Thick Rolled Oats

  • Ground flax seed: I used Spectrum Organic

  • Unflavored collagen peptides: I use Thrive Market's, can substitute for your favorite protein powder

  • Hemp seeds: I use the shelled ones from Trader Joe's

  • Sea salt

  • Peanut butter: I use Trader Joe's Valencia No Salt Peanut Nutter - the only ingredient is peanuts, can substitute for any nut or seed butter

  • Honey

  • Cacao nibs: I use Terrasoul Superfoods, can substitute for mini chocolate chips or completely omit

  • Optional: sea salt flakes for topping, I used Maldon Sea Salt Flakes

Materials you'll need:

  • Medium-sized mixing bowl

  • Mixing spoon

  • Dinner plate

  • Parchment paper

How to do it:

First, mix all dry ingredients besides cacao nibs in a medium-sized mixing bowl: oat flour, ground flax seed, collagen peptides, hemp seeds, and sea salt.

Next, mix in peanut butter and honey until fully combined.

Fold in cacao nibs.

Form mixture into 16 balls and place on a plate with parchment paper.

Sprinkle tops of balls with sea salt flakes, place in freezer for 20 minutes, & enjoy!

Store in airtight container in fridge or freezer.
