Chocolate Truffles


Rich, smooth, and decadent CHOCOLATE TRUFFLES that will melt in your mouth. Most chocolate truffle recipes involve lots of time, making a difficult ganache, and creating a huge mess! This recipe is just the opposite - homemade indulgence with minimal effort and cleaning? Sign me up!

Here is what you will need:

  • Creamy peanut butter: I love using this Trader Joe's Valencia Creamy Peanut Butter because the only ingredient is peanuts!

  • Maple syrup: I use this Organic Amber Maple Syrup from Trader Joe's

  • Coconut oil: separated

  • Cacao powder: this one from Trader Joe's is a good one! Can you tell I love Trader Joe's?

  • Unflavored collagen peptides (optional): I like added this into recipes because it gives it some added protein! I used Vital Proteins.

  • Salt

  • Chocolate chips: I used Lily's dark chocolate chips

Materials needed:

  • A medium-sized mixing bowl

  • Mixing spoon

  • Measuring cups & spoons (or a food scale - I love using a food scale because it minimizing dirty dishes!)

  • A dinner plate lined with parchment paper

  • A small microwave-safe bowl

  • Two forks

How to do it:

First, in your medium-sized mixing bowl, mix all your wet ingredients together until fully combined: peanut butter, maple syrup, and 1 tb of melted coconut oil.

Add in your dry ingredients to mixture: cacao powder, collagen peptides, and salt.

Mix until fully combined - batter should be thick like picture above!

Roll batter into 12 1-inch sized balls and place on a plate with parchment paper.


Pop these in the freezer for 15 minutes - this makes coating them with chocolate a whole lot easier!


While they are in the freezer, add chocolate chips and 1 ts of coconut oil to a small, microwave-safe bowl and microwave until fully melted.

One-by-one, using two forks, take each truffle and dunk it into melted chocolate, move it around until it is fully covered. Repeat until all truffles are covered.


Place truffles in the freezer for another 15 minutes.

Store in an airtight container in the fridge for the most perfect texture! Enjoy!
