Copycat Pasta Fresca

Does anyone remember Pasta Fresca from Noodles & Company?? Working there in high school, this was my favorite dish. I would get it every. single. break. The flavor was so good and sadly, they discontinued this dish, so I decided to recreate it and boy, does it bring back memories! Hope you enjoy this as much as my high school (and current) self did!

Here is what you'll need:

  • Pasta (preferably penne): I love using Trader Joe's organic brown rice pasta

  • Chicken tenderloins or chicken breasts

  • Roma tomatoes

  • Red onion

  • Fresh spinach

  • Olive oil: can substitute avocado oil

  • Shredded parmesan cheese

Here is what you'll need for the sauce:

  • Olive oil

  • Balsamic vinegar

  • Dry white wine

  • Minced garlic

  • Sea salt

  • Black pepper

  • Garlic powder

  • Italian seasoning

Materials you'll need:

  • Air fryer: or however you would like to cook the chicken

  • Medium saucepan

  • Colander

  • Cutting board and a sharp knife

  • Large stockpot

  • Small bowl

  • Large mixing spoon

First, season the chicken with salt and pepper and cook however you prefer! I air fried mine at 400 degrees for 10 minutes.

Next, boil your pasta according to the instructions on the box/bag.

Cut up the onion in thin slices and roma tomatoes into medium-sized chunks like the picture above!

In the stockpot, heat 1 ts of avocado/olive oil over medium-high heat and add chopped red onion. Cook until onion has softened a little bit, about 5 minutes. Reduce heat of stove to low.

Meanwhile, mix all of sauce ingredients in a small bowl.

Once chicken is fully cooked, cut into small pieces.

Once pasta is done, strain and add to the stockpot.

Next, add chicken, spinach, tomatoes, and sauce to stock pot and mix until spinach is blanched, about 3 minutes.

Plate, top with shredded parmesan cheese, and enjoy!!!
