Double Chocolate Oatmeal Cups

DOUBLE CHOCOLATE OATMEAL CUPS! Made with oats, cacao powder, and sweetened with banana, protein powder, chocolate chips, and a dash of honey - these make for the perfect on-the-go breakfast, midday pick-me-up, or after dinner treat!

What you'll need:
Overripe bananas
Eggs
Vanilla extract
Honey: completely optional, add more for extra sweetness, can substitute for maple syrup or agave
Chocolate protein powder: I use Orgain Chocolate Protein Powder
Cacao powder
Baking powder
Sea salt
Oats: I use Bob's Red Mill Extra Thick Rolled Oats
Almond milk: I use Califia Farms Unsweetened Vanilla Almond Milk
Chocolate chips: I used Lily's Semi-sweet Style Baking Chips this time
Materials you'll need:
Muffin tin
Silicone/paper muffin liners or nonstick baking spray
Large mixing bowl
Fork or potato masher
Whisk
Rubber spatula or mixing spoon
How to do it:
First, preheat oven to 350 degrees and line a muffin tin with silicone/paper liners or spray it with nonstick baking spray.

In a large mixing bowl, mash bananas with a fork or potato masher.

Add in eggs and whisk thoroughly.

Add in vanilla extract and honey and whisk again thoroughly.
Next, add protein powder, cacao powder, and baking powder to mixture and mix until fully combined.

Mix in almond milk until it become a thinner texture.
Fold in oats into mixture.

Fold in chocolate chips until fully combined.
Disperse batter into prepared muffin tin and bake for 25-30 minutes.

Let cool for 20 minutes and enjoy with a dollop of peanut butter on top or just on its own!
