Ham & Chile Egg Bake
Happy Memorial Day! Starting off this morning with a family classic - an egg bake!
This has been my mom's go-to breakfast since I can remember. She passed it on to me and I have been able to make it for friends a bunch! Egg bakes are virtually fail proof with the amount of ingredients, but this combination is my favorite - ham & green chile!

What you'll need:
Plain Greek yogurt: can substitute sour cream
Shredded cheese: any kind!
Diced ham: can use any type of meat, I have used turkey sausage and bacon before too! Can use all veggies too!
2 cans of chopped green chiles
First, preheat the oven to 350 degrees and grease 9x13 baking dish.
Next, in a large mixing bowl, whisk your eggs.
Add in Greek yogurt and mix well.
Add in green chiles, ham, shredded cheese, salt, and pepper and mix well.
Pour egg mixture into prepared baking dish. Half each grape tomato and place on top of egg mixture - like the image above & below.
Pop it in the oven for 45 minutes. Once time is up, switch oven to broil at 500 degrees and broil for 3-4 minutes.
Let sit for 20 minutes before you cut into it.
Top with salsa or hot sauce & enjoy!!!
