Peanut Butter Chocolate Chip Banana Bread Bars

Peanut butter, chocolate, and banana walk into a bar...
But in all seriousness, these PEANUT BUTTER CHOCOLATE CHIP BANANA BREAD BARS are what's happenin' today!
Is it a breakfast bar? Is it a dessert?
It is whatever you put your mind to!

Here is what you need:
2 ripe bananas
An egg
Peanut butter
Coconut oil
Maple Syrup
Vanilla extract
Whole wheat flour - can substitute for white flour, almond flour, coconut flour, or any of your favorite flour substitutes
Old fashioned oats
Baking powder
Salt
& of course, chocolate chips!
First up, you are going to preheat your oven to 350 degrees and grease your 9x13 pan with coconut oil spray or any nonstick cooking spray.
Mash up bananas and add the rest of the wet ingredients in with bananas - whisk until everything is fully combined.
In a separate bowl, mix up the dry ingredients and then mix dry ingredients in with the wet ingredients until fully combined. Batter should look like the image below.

Next, spread your batter into the prepared 9x13 baking dish evenly.
Pop in the oven for 25 minutes!

Once fully baked through (I can usually tell by the golden edges, but use the toothpick test if you choose!) let sit for 20-30 minutes and then cut into 12 bars.

Let cool on a wire rack if you wish :)

TIP: store in the fridge to maintain moisture!
