Peanut Butter Crispy Bars

If you love easy recipes and peanut butter, these no-bake CRISPY PEANUT BUTTER BARS are for you! Made with peanut butter, honey, Trader Joe's High Fiber Cereal, and a thin layer of chocolate on top!

Here is what you need:
Peanut butter: I use this Trader Joe's Valencia No Salt Creamy Peanut Butter, I like this one because the only ingredient is peanuts!
Trader Joe's High Fiber Cereal: can substitute for another high fiber, unflavored cereal
Honey
Melting chocolate
Coconut oil
Materials needed:
8x8 baking dish
Parchment paper
Small saucepan
Rubber spatula
Medium-sized mixing bowl
Small microwave-safe bowl
First, line an 8x8 baking dish with parchment paper and set aside.

Next, heat the peanut butter and honey in a small saucepan over low-medium heat until it has melted - this takes about 4-5 minutes.
Measure out the high fiber cereal in a medium-sized mixing bowl and add melted peanut butter/honey to mixing bowl. Mix until it is fully combined.

Spread cereal mixture into prepared baking dish and use a rubber spatula to flatten across dish evenly.

In a small microwave-safe bowl, add the chocolate chips and coconut oil - microwave until chocolate has fully melted.
Pour chocolate on top of cereal mixture and spread across evenly. Pop it in the freezer for 20 minutes or until chocolate has solidified.

Cut into 9 bars and enjoy!!! Easy, peasy, lemon-squeezy.
