Roasted Beets

ROASTED BEETS are on repeat this summer! I have been meal prepping these for the past couple months to use in lunches and for topping salads. They're earthy, easy, and roasting makes them so much more flavorful!

What you'll need:
3 medium/large beets
Avocado/olive oil or spray: I like to use avocado oil spray - very easy to use!
Sea salt
Garlic powder
Black pepper
Materials you'll need:
Cutting board
Sharp cutting knife
Vegetable peeler
Two baking sheets
Aluminum foil
How to do it:
First, preheat oven to 400 degrees, line two baking sheets with aluminum foil, and coat baking sheets with half of avocado/olive oil or spray.

Next, cut heads and bottoms off of each beet and using a vegetable peeler, peel the outer layer of each beet off - I recommend using rubber gloves when cutting beets because they will stain your skin.

Cut each beet up into small pieces and line baking sheets - do not overcrowd baking sheets.
Coat tops of beets with remaining avocado/olive oil/spray and sprinkle all seasonings over top, covering evenly.
Bake for 25 minutes.
Once 25 minutes is up, switch oven to broil at 500 degrees and broil for 4-5 minutes - make sure to keep any eye on the oven during this step as the beets can burn easily.
Let cool for 5 minutes and enjoy!
