Roasted Garlic Spinach Artichoke Dip


Spinach Artichoke Dip is one of those appetizers that everyone seems to love. I had some of the best spinach artichoke dip a few weeks ago with a friend and I was inspired to make my own recipe! ROASTED GARLIC SPINACH ARTICHOKE DIP - a creamy, cheesy dish loaded with spinach, artichokes, and roasted garlic!


Because the garlic roasting process is a little long, I've made a more time efficient version as well as the flavorful roasted garlic version in the details below!

Here is what you'll need:

  • Heads of garlic: substitute 1 tb of garlic powder if doing time efficient recipe

  • Olive oil: can substitute avocado oil

  • Shallot

  • Plain Greek yogurt

  • Salt

  • Pepper

  • Garlic powder

  • Shredded mozzarella cheese

  • A can/jar of artichokes (drained)

  • Frozen spinach: I used the chopped frozen spinach from Trader Joe's

  • Shredded Parmesan cheese

Materials you'll need:

  • Aluminum foil

  • Large baking dish

  • Cutting board

  • Sharp knife

  • Large mixing bowl

  • Mixing spoon

  • Small plate

  • Fork

How to do it:

Preheat your oven to 400 degrees and grease a large baking dish with nonstick cooking spray.


Strip the white flakey layers off of the garlic heads and cut about 1/4 inch from the top of each garlic head.

Lay out a piece of aluminum foil (enough to cover garlic heads with) and place garlic on aluminum foil with the end that is cut up.


Drizzle 1 ts of olive oil over the top of garlic and cover fully with aluminum foil.


Place in preheated oven to 30-35 minutes.

Meanwhile, cut up shallot into small pieces.

Heat the remaining 1 ts of olive oil in a frying pan over medium heat and place shallot in pan - cook until shallot becomes transparent and aromatic.


Once shallot is cooked, place in large mixing bowl.

Add Greek yogurt, salt, pepper, garlic powder, 1 cup of mozzarella cheese, artichokes, and frozen spinach into mixing bowl with shallot and mix until fully combined.

When garlic is done, switch oven to 350 degrees and let garlic cool for a few minutes.


Use your fingers to squeeze the garlic cloves out of their skin - place all skinned cloves on a small plate and with a fork, mash roasted garlic well and then mix into mixing bowl.

Pour mixture into prepared baking dish and top with remaining mozzarella cheese and Parmesan cheese.


Pop it in the oven for 25 minutes.


Switch oven to broil at 500 degrees and broil for 3-4 minutes or until cheese appears to be golden brown.

Serve with veggies, pita chips, or crackers and enjoy!
