Roasted Sweet Potato Rounds
A simple recipe with just six ingredients!
These crispy, roasted sweet potato rounds are great if you don't have an air fryer or are looking for an addition to any dinner or meal prep!
Austin prefers these, I prefer my Air Fried Sweet Potato Fries - I'll let you be the judge!!!

What you need:
2 medium sweet potatoes
Avocado or olive oil
First, preheat your oven to 400 degrees and line a baking sheet with aluminum foil (optional - I use it to minimized dishes) and spray/coat with half of the avocado/olive oil.
Next, skin sweet potatoes or wash the skin thoroughly and cut into quarter-inch thick slices.
Line you baking sheet with sweet potato slices, laying them down flat and not overlapping/overcrowding!
Spray/coat tops of sweet potatoes with remaining avocado/olive oil and sprinkle with salt, pepper, garlic powder, and paprika.
Pop them in the oven for 20 minutes.
After 20 minutes is up, switch the oven to broil at 500 degrees and broil for 3 minutes or until crispy! Make sure to keep an eye on the oven when it is on broil as the potatoes can burn easily!
