Roasted Sweet Potato Wedges

Another sweet potato recipe for you because I'm obsessed! These Roasted Sweet Potatoes are the perfect side for your 4th of July grill-out! Minimal ingredients and effort, but a whole lotta flavor!

Here is what you'll need:
2 medium-sized sweet potatoes
Avocado or olive oil: I find that using a spray avocado or olive oil works best for full coverage!
Sea salt
Garlic powder
Paprika
Materials you'll need:
Cutting board
Sharp knife for cutting sweet potatoes
Baking sheet
Aluminum foil, parchment paper, or nonstick cooking spray
How to do it:
First, preheat oven to 400 degrees, line baking sheet with aluminum foil (or parchment paper, or spray with nonstick cooking spray), and coat with half of avocado/olive oil.
Next, wash the sweet potatoes thoroughly.

Cut sweet potatoes in wedges - I do this by cutting the sweet potato in half (vertically) and then cutting starting from the outside of the potato at a slant toward the middle of the potato.

Once both potatoes are cut into wedges, line the prepared baking sheet with them - don't overcrowd or overlap potatoes.
Coat the tops of the sweet potato wedges with remaining avocado/olive oil and sprinkle with all of the seasonings.
Bake for 20 minutes and then switch the oven to broil at 500 and broil for 4-5 minutes - make sure to keep an eye on the potatoes during this step as they can burn easily!

Serve with ketchup or your favorite dipping sauces and enjoy!!!
