Spring Rolls with Peanut Sauce


Spring rolls are so fun to make, you can adjust the fillings to your liking, and they are oh so yummy!


Paired with homemade peanut sauce, you have yourself a delicious appetizer or a full entree. These have made it on our weekly menu a lot lately and should be on yours too!

What you'll need:

  • Spring roll rice papers: you can find these at any grocery store in the Asian food aisle!

  • Chicken breasts: can substitute for tofu, shrimp, any other meat that you would like, or you can just omit!

  • Glass noodles: or rice noodles, can also find these at any grocery store in the Asian food aisle!

  • Any veggies that you want: I used green cabbage & carrots, cilantro, basil red onion, and red bell pepper (LOVE avocado too, but didn't have a ripe one on hand this time!)

  • Optional toppings: black sesame seeds, chopped peanuts, & sweet chile sauce

What you'll need for the peanut sauce:

  • Peanut butter

  • Tamari: can substitute for soy sauce

  • White vinegar: can substitute for any other vinegar

  • Minced garlic

  • Garlic powder

  • Ground ginger

  • Distilled water

  • Juice of half a lime

Materials needed:

  • Small saucepan

  • Colander

  • Small bowl for the sauce

  • Cutting board and knife

  • Wide, shallow dish

First, boil the glass noodles according to the directions on the bag or box.

Meanwhile, whisk all of the sauce ingredients together in a small bowl.

The consistency should be medium-thin - enough to be able to stay on your spring rolls when you dip them.

Prepare a wide, shallow dish with room temperature distilled water - just like the picture above.

If not already prepared, chop up all of your fillings.

One-by-one, dip a spring roll rice paper into the water for a few seconds, lay damp rice paper flat on a plate, place your desired fillings in the center of the rice paper (make sure to leave enough room to fold over edges and roll).


Folding instructions: fold one side of the rice paper over your fillings, tuck each side in and continue to roll until all fillings are covered and it makes a cylinder-like roll (watch my highlight stories @simplebykell on Instagram for a video of me doing it!)


Repeat until all rice paper and fillings are used.

Enjoy with prepared peanut sauce and sweet chile sauce!
